Semi-Failed Experiment #2

the title of my new coconut cake.

Experiment number one was coconut cupcakes; I returned from a short trip to the garage to find they had imploded on themselves. The center wasn't thick enough to stand alone, so I couldn't fill it with cream even, and they had to be banished to Smushed In A Box.

Experiment number two, which involved less frosting and more actual coconut, resulted in one semi-imploded cake that Would Not come out of the cake pan, and one that did rather nicely. So I now have a single layer coconut cake with lots of coconut heaped in the middle to hide the fact that it dips down quite a bit.

All this experimentation was for Negar, coworker the Persian, who loves coconuts dearly. The district manager is also coming by tomorrow, which is entirely coincidental and didn't even occur to me until a few minutes into baking the first experiment. I might try to hide it from her... or make up a persian holiday.

Tomorrow: oatmeal cookies for the Brother!
Thursday: Peanut butter cookies for Preacher's Wife and also Beverly, who will no longer be working at our store as of Friday.

Inother news: school starts in a few days! I'm rather glad... mostly because I'm happy to not be at work six days a week, but also my classes sound exciting. Hopefully I get into hebrew... I've been waitlisted all summer and now I'm number 1 and have been for the last two weeks! Every morning I check my status, but no, number one and holding. Surely I'll get into the class...

I need new pens and grid paper.

Thursday promises to be a good day. One new thrift shop, one new used book store, and some sort of historic district to check out~
